Olitalia’s FRIDÒR is an innovative frying blend composed of bifractionated palm oil, and high oleic sunflower oil. The blend is skilfully balanced in order to guarantee the best frying performance, and it is scientifically certified by Olitalia R&D with the cooperation of the University of Bologna.
FRIDÒR combines the characteristics of bifractionated palm oil with those of high oleic sunflower oil. The high monounsaturated component, gives the blend good oxidation stability, which results in a higher resistance to degradation reactions typical of the frying process.
With FRIDÒR, the frying bath is able to withstand up to 20% more frying cycles than with a standard frying blend, which guarantees crispy, flavourful food.
FRIDÒR offers important nutritional benefits. during frying, the food is enriched with monounsaturated fatty acids which increase the fluidity of cell membranes, thus lowering the incidence of cardiovascular disease.

Olitalia collaborated with the Association of Professional Italian Chefs (APCI) in organizing an educational lunch at which guests were offered a guided tasting of the different regional cultivars of extra virgin olive oil in combination with dishes presented and prepared ??by a staff of chefs from the Association itself.
The event “LE STELLE DELLA RISTORAZIONE”, which included various workshops, tastings and gastronomic experiences, involved over one hundred chefs and took place against the sunny backdrop of the towns of Cesena and Cesenatico on the Romagna Riviera. At this special edition of the event the Trophy of Honour was awarded by the Association to a number of outstanding professional chefs and restaurateurs.
