Courgette pancakes

Ingredients for 15 pancakes:

  • 450 gr. - Courgettes
  • 90 gr.  - All-purpose/00 flour
  • 2 - eggs
  • 2 Tablespoons - Olitalia ORO 100% Italian extra virgin olive oil
  • Q.s.  - Salt
  • Q.s.  - Pepper


For the topping:

  • Q.s. - Olitalia ORO extra virgin olive oil
  • Q.s.  - Goat cheese spread
  • Q.s. - Cherry tomatoes

    Cut the courgettes into chunks and place them into a bowl. Add the eggs and blend using a hand blender.

    Add the flour to the mixture, season with salt and pepper and, finally, add some Olitalia ORO extra virgin olive oil. Use a whisk to mix well.

    Use an ice-cream scoop to dose the pancake mixture and cook the pancakes in a non-stick pan with some oil. Cook on both sides.


Food plating

You can use the topping you prefer for your courgette pancakes; we used some goat cheese spread and cherry tomatoes.
