Mackerel in cooking oil, sweet and sour onion, vegetable spaghetti with powdered oil

Debone the mackerel filets and place in a vacuum bag, add the herbs, spices and the Olitalia Ogliarola Monocultivar extra virgin olive oil.
Seal the vacuum bag and steam cook at 60°C for two hours.
Slice the Tropea onion and add to saucepan with Olitalia extra virgin olive oil, raspberry vinegar, sugar, honey and a pinch of salt.
Cook for 15 minutes, cool and set aside.
Clean the vegetables and use a mandolin to cut them into spaghetti.
Place in cold water to firm them, sauté in Olitalia Ogliarola Monocultivar extra virgin olive oil, adjust salt, and keep warm.
Filter the mackerel cooking oil and add the maltodextrin, rub with the fingertips until you have a powder you can use to season everything, making full use of the used oil.
Arrange the sweet and sour onion in the center of the plate. Cook the mackerel filets in Olitalia Ogliarola Monocultivar extra virgin olive oil, place on top of the onion, and top it with the vegetable spaghetti and powdered Olitalia Ogliarola Monocultivar extra virgin olive oil.
