Mackerel in cooking oil, sweet and sour onion, vegetable spaghetti with powdered oil

Serves 4

For the mackerel

  • 100 g - Olitalia Ogliarola Monocultivar Extra Virgin Olive Oil
  • 20 g - Ginger  
  • 10 g - Orange zest
  • 5 g - Lemon thyme
  • 1 - Garlic clove

 

For the sweet and sour onion 

  • Tropea onion
  • 30 g - Olitalia Ogliarola Monocultivar Extra Virgin Olive Oil
  • Raspberry vinegar
  • 20 g - Sugar
  • 10 g - Acacia honey
  • Salt

 

For the spaghetti 

  • 50 g - Carrots
  • 50 g - Zucchini
  • 20 g - Olitalia Ogliarola Monocultivar Extra Virgin Olive Oil
  • Salt

 

For the Extra Virgin Olive Oil powder

  • 50 g - Olitalia Ogliarola Monocultivar Extra Virgin Olive Oil
  • 20 g - Maltodextrin

Procedure

 

For the mackerel

    Debone the mackerel filets and place in a vacuum bag, add the herbs, spices and the Olitalia Ogliarola Monocultivar extra virgin olive oil.

    Seal the vacuum bag and steam cook at 60°C for two hours.

 

For the sweet and sour onion

  • 1

    Slice the Tropea onion and add to saucepan with Olitalia extra virgin olive oil, raspberry vinegar, sugar, honey and a pinch of salt.

    Cook for 15 minutes, cool and set aside.

 

For the vegetable spaghetti

  • 1

    Clean the vegetables and use a mandolin to cut them into spaghetti.

    Place in cold water to firm them, sauté in Olitalia Ogliarola Monocultivar extra virgin olive oil, adjust salt, and keep warm.

 

For the extra virgin olive oil powder

  • 1

    Filter the mackerel cooking oil and add the maltodextrin, rub with the fingertips until you have a powder you can use to season everything, making full use of the used oil.

 

Arrange the dish

Arrange the sweet and sour onion in the center of the plate. Cook the mackerel filets in Olitalia Ogliarola Monocultivar extra virgin olive oil, place on top of the onion, and top it with the vegetable spaghetti and powdered Olitalia Ogliarola Monocultivar extra virgin olive oil.
