Pork fillet with apples in vinegar

Core and chop the apples. Place them in a saucepan with 2 tbsp of Olitalia Extra Virgin Olive Oil, 3 tbsp of Il Deciso vinegar, and a pinch of salt. Cook down until reduced to a smooth purèe.
Marinate the pork fillet for a few minutes in Olitalia Extra Virgin Olive Oil, salt, pepper, and Il Deciso vinegar. Sear the meat in a hot pan on all sides until beowned. Transfer to an ovenproof casserole dish along with the herbs, garlic, and a knob of butter, then finish cooking in the oven ad 180°C for 10 minutes.
