Cheesy potatoes and mushrooms croquettes

500 g. - Yellow-flashed potatoes, cooked and smashed
- Salt and black pepper to taste
1 - Egg yolk
80 g. - Mixed mushrooms in oil, well drained and coarsely chopped
- Frienn frying oil by Olitalia
40 g. - Grated Parmigiano Reggiano
- Nutmeg to taste
Q.s. - Smoked scamorza cheese (about 100 g., cut into sticks)
1 - Egg
250 ml. - Whole milk
25 g. - Cornstarch
45 g. - Sugar
- Seeds of half a vanilla bean
In a bowl, combine the warm mashed potatoes, egg yolk, Parmigiano, well-drained chopped mushrooms, salt, pepper, and a pinch of freshly grated nutmeg. Mix until you get a uniform, workable dough.
Take a portion of the mixture, place a stick of smoked scamorza cheese in the center, and shape it into a log-shaped croquette around the cheese.
Bread each croquette by dredging it first in flour, then dipping it in the beaten egg, and finally coating it thoroughly in breadcrumbs.
Fry the croquettes in hot Frienn frying oil by Olitalia (170–175°C / 340–350°F) until evenly golden brown. Drain on paper towels and serve hot while the cheese is melted and gooey./p>
